My copy of The Glucose Revolution shows rutabagas to have a glycemic index
of 72 on the glucose = 100 scale while white potatoes can range from 63 when
boiled to 85 when baked. Interesting that sweet potatoes have a glycemic
index of 54 when boiled.

So I guess turnips and rutabagas are way ahead of potatoes in terms of
fiber/CHO ratio, and total CHO content by weight. But what I don't
understand is that if you look at a glycemic index it's a different
story. On the white bread index, white potato is 80, and rutabaga is
103! I didn't see turnips listed.
