Carbs like starches and grains liberate their glucose bonds easily and cause
blood sugar to increase relatively quickly, with a peak at about the 30 to
45 minute level after eating. The increase in blood sugar normally gives us
energy. Blood sugar levels don't fall again until 2 to 4 hours after
eating.
If you feel tired after eating, food allergies/sensitivities are likely the
cause. This is quite common with gluten-containing foods, like bread (I'm
the same way).
