Although I am currently living in france, I am Scottish. My mother used
to serve haggis frequently - it isn't just saved for Burns night.
Haggis is the large stomach bag of a sheep stuffed with , the smaller
knight's hood bag, the pluck [liver, heart, lungs], beef suet, oatmeal,
onions, black pepper and salt.

It is a very savoury dish and shouldn't have too much oatmeal or onion
-  commercial haggis is often really high in carbs being mostly oatmeal
and onion in a large sausage skin - yuk!

If you are making your own haggis, sew the stomach bag rather than
tieing it and remember to prick it all over ar it will explode when you
boil it {this used to be a common kitchen disaster but few people make
their own now]
