Hi Lisa,



Here are two different recipes that I have used:



Chocolate "butter" frosting



1/2 cup dairy free margarine

3 cups powdered sugar

1 cup Ghiradelli's sweet ground chocolate (you can also use baking cocoa for
this, the sweet chocolate gives it a richer flavor)

1/2 teaspoon salt

1 teaspoon vanilla

1/3 cup chocolate soy milk



Melt the margarine.  Mix all ingredients in the mixer until well blended.
Frosting should be thick, yet spreadable.  You can alter the consistency as
needed by either adding more powdered sugar or more soy milk.



This recipe can easily be adapted to make different flavors.  For instance,
to make a vanilla frosting replace the 1 cup of cocoa with 1 additional cup
of powdered sugar and replace the chocolate soy milk with vanilla soy milk.
