it's been absolutely years since i prepared venison. depending on what the critters have been feeding on, the meat can be downright tasty, and not particularly gamey. but then i got used to the stuff, being married at the time to a hunter. we ate only meat that he brought in.
i would usually season the meat (salt, pepper, garlic, whatever you want), brown it, then put some broth in the pan, cover it with a lid, turn the temp way down, and let the meat cook for a while in the juices. it was very tender and very tasty.
