Look for -side pork- it is the same cut that is made into bacon, but
uncured. Some stores will carry it on a regular basis, at other stores
you will have to special order it. You flavor it yourself.

I have found one brand of bacon without any form of sugar, it is called
Gwaltney's and is sold at Walmarts. Of course, it is still full of
nitrates.
