Todd, I don't like bothering with cooking up small quantities of rice. One
solution I've used for years is to cook a whole bunch at one time and then
portion and freeze it. Thawed and heated, it's just fine! Give it a try. I
currently have 10 2-person, 2-meal portions in my freezer. My Anchell book
is on its way from Amazon...I'm getting ready.
