There is a bleep on celiac disease in the December 11, 2000 Forbes Magazine
which my husband called to my attention...

    It's in an article on genetic engineering of foods, Why Frankenfood is
our Friend, and notes the benefits of the process for those who suffer from
allergies and food intolerances.  Incidence of celiac in US & Europe cited at
1 in 250..
