Today, Elaine Monarch at the Celiac Disease Foundation in Sherman Oaks
California sent me a sample of a booklet in which all of you may be interested.

Energ-G foods in the US, phone (800) 331-5222 offers an excellent, 40 page
booklet called "Detailed Ingredient Listing" which goes into exhaustive details
on each ingredient in each of its products.  Since their products contain
hundreds of ingredients, its a good guidebook for further research.  I have not
heard anyone state whether they agree with all the assertions made in the
guidebook, but it is certainly a good starting place.

For example, here is a quote from page 21:

"Yeast may be grown in sugar slurries containing starches (including wheat) and
malts (including barley).  Universal Foods Corporation guarantees the yeast
used by Ener-G Foods (Red Star) not to be grown in these susbtances"....(quote
from letter omitted
