I don't know if this will help, but when I first researched Celiac disease, I
learned this:
The average person on a normal diet consumes between 10 and 40 g of gluten
per day. For a celiac, even 0.1 g of gluten/day can damage their intestinal
villi, putting them at risk for intestinal lymphoma (15% of gluten-eating
celiacs will get lymphoma---this is equivalent to a risk that is 60 times
higher than that of the general population). So, do medications have 0.1 g?
I don't know. Maybe not. But combine that with the hidden gluten celiacs
probably ingest everyday, despite all efforts to eat a GF diet, and maybe it
will add up to 0.1g. Don't be intimidated by your physician's irritation.
If they don't care, they should. Educate them about these statistics. I am
sorry that I do not remember the source for this information. I learned
these figures this summer and have committed them to memory ever since,
because I am determined to keep my husband's risk for lymphoma as low as
possible!
