Or gingerbread people if you are politically correct.  Several people
recommended the gingerbread mix from the Gluten Free Pantry, as well as Miss
Robens. Other suggestions were converting the old Betty Crocker's recipe or
making mock graham crackers and cutting into shapes.

Gingerbread Cutout Cookies
1 1/2c dark molasses
1c packed brown sugar
2/3c cold water
1/3c shortening (golden crisco)
7c Bette Hagman GF flour mix (rice flour, potato starch, tapioca starch)
5 tsp xantham gum
2 tsp baking soda
1 tsp salt
1 tsp ground allspice
2 tsp ground ginger
1 tsp ground cloves
1 tsp ground cinnamon
Decorators frosting

Mix molasses, brown sugar, water and shortening. I put these in the bowl
and turned on the mixer while I mixed the rest of the ingredients. Mix in
remaining ingredients except frosting. Cover and refrigerate at least 2
hours.

Heat oven to 350. Roll dough 1/4 inch thick on floured board (sweet rice
flour). Cut with floured gingerbread or cookie cutters. Place about 2 inches
apart on lightly greased cookie sheet. Bake until no indentation remains
when touched, about 10-12 minuts.  Cool.  Frost or decorate w/frosting.
Makes abour 2 1/2dz 2 1/2 in cookies.

Decorators Frosting 2c powdered sugar 2-3 tbsp water Mix adding2 tbsp
water and the third one as needed.  Should go esily into decorators tube
or hold shape.  Split into separate bowls and color them.

Gingerbread Men
1 3/4c gluten free flour mix
1/2 tsp cream of tartar
1/2 tsp soda
1 1/2 tsp xantham gum
1/8 tsp cloves
1/4 tsp cinammon
1/2 tsp ginger
1/8 tsp salt
1/2 c margarine (Fleischmans)
1/2c brown sugar
1 egg
1/2tsp molasses
Combine flour, cream o ftartar, baking soda, xantham gum, cloves, cinnamon,
ginger and salt. Mix well. Cut in margarine till small crumbs the size of
peas are formed. Or put in a mixer to do this. In a small bowl, beat egg,
sugar, and molasses. Add to dry mixture and mix until the dough pulls away
from the sides.  Form dough into flat ball shape and refrigerate one hour

Dust some freezer paper w/flour. Put the dough on  the freezer paper and
sprinkle w/flour.  Roll the dough to 1/4 inch thick and cut out desired
shapes. Can put mini chocolate chips on the gingerbread men for eyes, nose,
buttone etc.  Bake 350 degrees for 12 minutes.  Cool on wire rack. Make
about 20 cookies.

Gingerbread Cookies
1 1/2cups rice flour or 1 3/4 c GF blend
1/2 tsp cream of tartar
1/2 tsp baking soda
1 1/2 tsp xantham gum
1/8 tsp salt
1/8 tsp cloves
1/4-1/2 tsp cinnamon
1/2-3/4tsp ginger
1/2 c cold butter or margarine
1/2c brown sugar
1 tsp molasses
1 cold egg

Combine dry ingredients, using the high or low amounts of cinammon and
ginger according to how much spice you like. Cut in the butter. Combine the
remaining ingredients and add to the flour mixture.  Chill one hour. Roll
dough 1/4 in ch thick, using powdered sugar or flour to keep dough from
sticking. Cut into desired shpaes and bake at 350 for 12 minutes.  Cool and
decorate as desired.  The number of cookies deponds how big they are.
Usually get 2-3 dozen.

Other suggestions were to bake on parchment paper, thereby handling the
dough less.  Also, make a hole with a straw or other object in the poor
gingerbread man's head before baking if you want them to hang.  Lastly, I
like to put small pieces of dough through the garlic press and decorate the
gingerbread men with raw dough before baking!  Thanks to all for their help.
