It is not true, IMHE, that almost all commercially available nuts are
roasted.  I frequently see and have purchased plain, shelled walnuts and
pecans in the produce section of supermarkets.

Of course, I agree that these are not the things most folks are buying.
Most people are eating TONS of refined PUFAs, margarine, shortening,
*vegetable* oil, Wesson oil, Crisco, canola oil, packaged products
containing hydrogenated oils, etc.  Look into most refrigerators, freezers
and pantries and you will be shocked.  (Don't have a heart attack over it,
though!)
