Hi

We've been eating flowers for years, just because we like them.  Nasturiums,
calendula (pot marigolds), violets, borage, all herb flowers, pansies,
roses...they make a nice garnish and most have a distinctive flavour.  I
don't know about nutritional value, but for sure, nasturiums are a part of
my vegetable garden every year.
