I have had both, and I much prefer the Excalibur.  The square trays
are
easier to arrange food on, and the horizontal airflow means that the
trays
on the bottom aren't warmer than the trays on the top.  There is also
more
room between the trays (vertically) on the Excalibur.  You can take
all the
trays out and dry large objects (non-paleo folks can proof bread or
make
yogurt) in the Excalibur, too.  It's all-around (no pun intended) more
flexible.

The only feature missing from both of these dehydrators is a timer.
