Personally, I think that 2-3 hours after eating is fine, as far as nutrition for
your workout. And, you should probably eat within about 2 hours after the
workout (based on what I have read).
There's no compelling reason to alter your diet for the workout, especially if
the workout is for your health (as opposed to an athletic performance where
winning or losing could affect your career...).
