This is another old family favorite recipe that easily converts to GF.

Pork and Wild Rice Chili

1 lb. boneless pork loin or chicken, cut into 1/2" cubes
1 onion, chopped
1 tsp. oil
1 tsp. cumin
1/2 tsp. oregano
3/4 cup wild rice, rinsed
2 cans (14 1/2 oz. each) GF chicken broth
1 can (18 oz.) corn, drained
2 cans (4 oz. each) chopped green chiles, drained

Saute meat and onion in oil until meat is brown and onion is soft.  Add
remaining ingredients.  Cover; simmer 45 minutes until rice is tender.
Serve and garnish with :

shredded GF mozzarella cheese
cilantro sprigs
GF tabasco sauce

I usually make this with chicken rather than pork.  If I half the recipe, it
makes a perfect amount for two of us.
