Last year I was diagnosed as being gluten and lactose intolerant but
have improved greatly with my gf diet. Recently, I have challenged bread
made with red winter wheat (cake flour)and seem to not have any strong
reaction (although the bread does not rise much). I have seen postings
that seem to indicate that bread made with unbleached white flour and
whole wheat flour may be tolerated. I fear trying this until I know more
about it . If anyone has information on this it would be helpful to me.
