The answer here might be to get Jenn-Aire or Kenmore to make a down draft
cooking fireplace for historic kitchens. I can see it now, the premium units
would come with extra sloppy factory installed mortar joints in the zee brick
veneer to make them look authentic. They could be showcased in full page ads in
the National Trust magazine. Everyone would buy them so they could enjoy
cooking in a cool clean modern kitchen. while reliving the way great great
granny use to do it. Poplar Forest has installed the mother of all down draft
systems, maybe they could be the test location.
