I received a few replies to my posting about the Ness Carbohydrase enzymes.
I followed up on these, and found that Ness makes a variety of enzymes, some
of which can be purchased online at
http://www.gaines.com/html/Ness/Ness.html .  These are a weaker variety than
the Carbohydrase, but they're also cheaper.

Carbohydrase must normally be purchased from a practitioner.  However, one
person mentioned that they can be bought directly from Needs Nutrition, at
l-800-634-1380.  The price is $27 per bottle + shipping, which is pretty
good.

Another brand of enzymes that my doctor sells is "Bioset Sugar/Starch".
These cost slightly less than Carbohydrase, but have twice the potency of
Carbohydrase, plus you get 50% more capsules, making them a very good value.
My doctor tells me that the Bioset line is also made by Ness (Enzymes, Inc).
However, I don't know the GF status of this enzyme, and I haven't called
Ness to confirm any of this information.  I haven't even tried these yet, as
my doctor is always running out.
