I sometimes talk to a friend from Mexico.     He tells  me
that his relatives lived in the mountains of Sinaloa in a
tiny village eating mostly Corn they raised themselves plus
a little meat.   Now the ones still in Sinaloa have new
trucks and are eating meat all the time.  Same as the ones
that came to the states,  mostly meat, some vegetables-
they do stay with the tortillas.

This suggests that if meat is easy to get some people will
eat more meat.
