In response to a very recent post - in my experience a gf diet is in no way
restricted to low carbs.
It can be a very varied and enjoyable diet. It is certainly easier for a
person who likes to bake. There are carbs galore - cookies, carrot cake,
muffins, biscuits, breads, baked beans, chilli, rice casseroles - the list
is endless. It even includes oatmeal porridge for breakfast for those of us
who know that uncontaminated oats are gf.
If it were a low carb diet I would not have put on several pounds
experimenting with bread and other baked recipes. It has become a bit lower
carb as I work those pounds off.
I will post the CREAM PUFF recipe shortly. I have had several requests for
it. These are nicely balanced carb and protein and fattening as anything.
