This is a banana cake recipe I converted to GF and it turned out so
moist and wonderful!

Here is the recipe:

        Frosted Banana Cake

        1/2 cup butter or margarine, softened
        1 1/2 cups sugar
        2 eggs
        1 cup (8 oz) sour cream
        1 tsp. vanilla
        2 cups of GF flour mix (rice flour, potato starch flour and tapioca
           flour)
        1 tsp. baking soda
        1 tsp. xantham gum
        1/4 tsp. salt
        2 medium bananas, mashed (about 1 cup)

        Frosting

        1 package (8oz) cream cheese, softened
        1/2 cup butter or margarine, softened
        2 tsp. vanilla
        4 cups confectioners' sugar

	In a mixing bowl, cream butter and sugar.  Add eggs, sour cream and
vanilla.  Combine GF flour mix, baking soda, xamtham gum and salt; gradually
add this to the mixture.

	Stir in bananas.  Spread into a greased 15 in x 10 in.  baking pan.
Bake at 350 degrees for 20-25 minutes.  Cool.  For frosting, in a mixing bowl,
beat cream cheese, butter and vanilla.  Gradually beat enough confectioners'
sugar to achieve desired consistency.  Frost bars.  Store in the fridge.
Makes 3-4 dozen

Enjoy making this delicious cake - your GF friends will not know this is
made with GF flours!

Beware....they will gobble it up before you get any!
