Daniel,
There is a selection in "tools,Replying" which tells eudora to quote only
selected portions of messages.

To select a portion of a message which is already on screen, put the cursor
at the beginning of the desired portion, hold down the shift key, move cursor to
end of desired quoted portion and release shift.  that should highlight your
portion.

we can't find a way to absolutely turn off quoting.
