I have to chuckle at your first line.  Where I work our department is
actually called "WIT".  Stands for "Workstation Installation Team".

Anyway, when you are in the BIOS you should be able to highlight the
parallel port option and press either PgUp & PgDn, + & -, or press enter and
use the arrow keys to select the appropriate option.

EPP is simply a protocol that allows for two way communication between your
parallel port and the computer that wasn't allowed for in older systems.  A
SCSI scanner would call for a different controller card alltogether, and may
have gotten you in deeper than what you have here.  Plus, they are more
expensive.  Hope this helps.
