1.  G! Foods has available  several low-fat cookies.  The Anise  Butter Cookie
has six grams of  fat and the Lowfat  Anise has three grams.   G! Foods,  3536

2.  Goodie's has opened their restaurant at the bakery (7217 Melrose Ave., Los
Angeles, CA 90046,  (213) 934-3001).   In  addition, they  now offer  Bohemian
White Bread Rounds and  two sugar &  lactose-free cookies (Chocolate  Nicoles,
Millicent Blueberry).  Their other products  were discussed in the January  95
issue.

3.  The Gluten Free Cookie Jar is operated  by a family of six celiacs.   They
use Ener-G Foods rice flour in  their products and is endorsed by  the Greater
Philadelphia Celiac Sprue  Group.   They offer 23  different cookies,  breads,
muffins, rolls, and cakes.  There  are also a Goodie of  the Month plan.   For

4.  Food by George Spinach and Ravioli are available nationwide from Garden
Spot Distributors, (800) 829-5100.  These pastas require refrigeration.
Garden Spot also carries several other GF items.  Remember to verify
ingredients as their GF list has items with oats and millet.

5.  Schiffey III Catering is well know to celiacs in the Long Island area.
They produce several mixes for mail-order shipment.  The mixes are: Bread
Crumb, Oven-baked Pancake, Sponge Cake, Irish Soda Bread, Angel Food Cake,
Stuffing, Pie Crust, Cheese Cake, and Yellow Rice.  Their address is:  9

6.  The Gluten-Free Pantry has obtained national exposure for celiacs and its
products through reviews on Good Morning America and the new food product
section of several newspapers.  They are sponsoring a baking contest using
their products.  Entries must be received by June 30, 1995.    Some of their
new products are:  Cherry Almond Marzipan Tea Cake Mix, Cornbread Mix, Coconut
Macroon Mix, Pastario Pasta, and a Pasta Mix.  The grand prize is a Zojirushi

7.  Mr Spice  products are now available  in some grocery  stores.  They  have
been found on the shelves at Goodings.  See the January 1995 issue for details
on these condiments.

8.  Dietary  Specialties White  Bread Mix can  be made  in the  oven or  bread
machine.  It is also lactose and egg free.  They now offer their  flours in 10
pound boxes at a reduced price.

9.  Ener-G  Foods is  offering its  cookies in  bulk quantities  at a  reduced
price.  A nutritional drink, Performance MX, is also available.

10.  Mallard Pond Farms discontinued business in January.

11.  Passover should be the best  holiday season of the year for  all celiacs,
Jewish or not, because  bread and noodles  are out.   However, matzo is  often
substituted for flour  in all  kinds of  products, so  read labels  carefully.
Here are some techniques from a Jewish family for remaining GF.

    A.  Boil the matzo  balls separately from the  soup, and then you  can
    have a little chicken  soup without worry and  everyone else can  have
    their sinkers.  Matzo is unleavened bread, made from wheat.  The baked
    cracker-bread is ground fine into matzo flour or ground  coarsely into
    matzo meal and added to commercial holiday products.

    B.  Recipes for Passover baking can often be adapted because  they use
    little or no  matzo flour.   You can easily  use gluten-free flour  in
    egg-white based cakes.  Also macaroons made with egg whites  and sugar
    have no  fat,  cholesterol or  gluten  except  when you  add  nuts  or
    chocolate bits. Macaroon recipes which do  call for a little flour  or
    matzo flour  work well  with  G-F flour.    Watch out  for  commercial
    macaroons, some have added matzo flour.

    C.  Different traditions have different rules.  So watch out  what you
    eat when visiting, offer to bring  the gefilte fish, pass on the  soup
    and have a great holiday.

    D.   The Sephardic  tradition allows  rice  and rice  products  during
    Passover.

12.  Gefilte  Fish for  Passover may be  hard to  find.  In  some locations  a
strictly orthodox kosher market in your  area may make their own gefilte  fish
for Passover without using matzo meal.

13.  Glatt Pesach Bakeries, in some orthodox neighborhoods (i.e. New York) are
only open for a few weeks before  the holiday.  They bake wonderful  cakes and
cookies with potato starch which are gluten-free.  Layer cakes, chocolate leaf
cookies, brownies, etc.  Most of these products are also parve, so  if you are
lactose intolerant,  it's  wonderful.    Some  supermarkets  in  large  Jewish
neighborhood may import  baked goods  from one  of these  bakeries.   Potatoes
cakes are available because some Orthodox  Jews won't eat matzo or matzo  meal
except at the seder.

14.  Seasons  Products are  a wonderful  line of  condiments available  during
Passover.  The label for the salad dressing was changed.  Previously it listed
cider vinegar; it  now reads  white vinegar.   The  vinegar is  not made  from
wheat.

15.  Welbilt Model 2100 Bread  Machine is now on the  market.  This one  pound
machine was tested by our own Food Editor, Mary Gunn.  Several  of her recipes
are included with the machine.  One source is Wal-Mart, where it  is priced at
$86.91.

16.  BASCO products  are available again.   The original supplier  encountered
problems and BASCO is obtaining the  products through another company.   Their
number is 800 MY-BREAD.

17.   Caramel color,  according to  the Code  of Federal  Regulations (CFR  21
73:85)   is  the  dark-brown  liquid  or solid  material  resulting  from  the
carefully controlled heat treatment  of . . .  food-grade carbohydrates.   The
carbohydrates sources  allowed  for  caramel color  include  dextrose,  invert
sugar, lactose,  malt  syrup,  molasses, starch  hydrolysates,  and  fractions
thereof, and sugar.

18.  Popcorn Rice is a naturally occurring Louisiana product.  The taste and
aroma of the rice are a welcome change and can be served with no additional
flavoring as a side dish.  If it is not available in your local grocery store,
there are several mail-order sources.  One reasonably priced source is:

19.  Cracker Substitute for use with a bowl of soup could be a handful of GF
chips (potato or corn).  Salted potato chips make an interesting cracker
substitute.

20.  Glutinous Rice is gluey or sticky. It does not means that the rice is
toxic to celiacs unless another toxic ingredient is added.
