I thought monounsaturates were safe to heat. I know polyunsaturates are
very unstable at high heats and change to trans-fats. That's why I thought
it was better to use the more stable olive oil, which maintains its
structure when heated. Justin, can you elaborate on what Erasmus says in
"Fats that Heal..."?
