Gawen, please note, that I didn't recommend a vegetarian diet (yet and here)
I just consider it possible as a paleolithic oriented nutrition.

The "vast majority" with the "chronic elevated insulin", as you say
are 95% non-vegetarians.
I'd say that the insulin problem together with the other carbohydrate
problems come from the *wrong* carbohydrates.
Or would you expect a chimp or and fruitarian or a fruitarian pre-hominid
had any
insulin problems, eating almost only carbohydrate energy?

Today in america 25 percent of *all* calories eaten come from *sugar*.
Isn't that horrible? Sogar without the ability to be broken down
will turn into fat. Such people may overeat in calories and become obese,
or they may restrict themselves and fast and encounter shortages on
vitamins.

Vegetarians as well as Omnivores as well aren't save from overeating
carbohydrates this way.
Meat only or ketogenic dieting persons will be save, but at a price.

Vegetarians as well as omnivores have the choice to replace some
carbohydrates by fat, which will reduce carbohydrate problems.
But as long as any of these don't stop to eat zero-vitamin carbohydrates
problems are to be expected.

A paleooriented nutrition, which takes care or carbohydrates to be in
a natural defined context (of unmodified sources) will not
encounter problems, like a lemu
r or a chimp will not encounter problems.
Of course, this is my personal prediction.
