A while ago we were swapping easy, quick recipe ideas. I thought I would share this one - all you need is a bowl, a pan and a can opener ! :-)

Mandarin Orange Cake

1 cup flour
1 tsp baking soda
1/4 tsp salt
3/4 cup white sugar ( can be cut back to ½ cup)
1 egg, beaten

Combine all ingredients and mix well. Stir in:

1 can mandarin oranges with juice

Pour into greased 8x8 inch square pan (or 9 inch round). Bake approximately 30-35 minutes at 350*F until toothpick inserted in centre comes out clean.

Topping:
3/4 cup brown sugar
2 tsp margarine
2 tsp milk

Combine above ingredients. Spread over cake. Return cake to oven under broiler for 4 minutes or until bubbly. 

Variations: Add coconut or slivered almonds to the topping or omit the topping altogether.

Serve warm or cold, plain or with whipped cream or ice cream.
