Severe illness occurs if beans are cooked in a crock pot as there is
insufficient heat to destroy the lectins- reference- David Free- do dietary
lectins cause disease?, British Medical Journal

Beans are not Paleo. I would expect all paleo foods to be safe in a crock
pot as they are all edible raw.

This assumes they are fresh, clean and free of pathogenic bacteria at the
time of cooking. The low temperature of a crock pot may not kill all the
bugs in contaminated food.
