evolution has occurred in the last 10,000 + yrs. >>

You may be right, but a lot of metabolic adaptation has occured, as well as
environmental and climate changes & differ, which made food choices also
change & differ. We don't necessarily need to go back 10,000 years to find
the way our ancestors lived and ate healthily. I believe it's the relatively
newer foods such as grains & dairy that pose so many of the health problems
of modern times. Even so, some people do handle these foods fine. And for
those who do not, there are different metabolic subsets among us.
