I'm Susan, 39, in Texas, and on the list for ~one month.  I have a ten year
old daughter who had chronic nasal drip and dark rings under her eyes.  Her
symptoms cleared up for the first time in years when we removed all dairy
from her diet.  She hates milk but craves cheese.  I've read that is one of
the symptoms.  I myself have scaly skin, severe hayfever, had a tonsilectomy,
preeclampsia, Hashimotos Thyroiditis, chronic sinus infections, adult onset
asthma, and now gastrointestinal troubles and signs of rheumatoid arthritis
that have finally made me research the reason for my immune system to be in
overdrive.  Drs' have only medicated symptoms.  I now believe I truly am what
I am eating. I am grateful for the information I glean from this list.  The
pumpkin pie recipe tidbit to use coconut milk as a replacement made my day.
I'm now using coconut milk to make all of my daughter's favorite recipes that
required milk. I lost a lot of weight over the past months from this gastro
deal and from being too afraid to eat anything.  I will try an elimination
diet once I have built my weight back up.  I'd appreciate any info on how to
create a menu or if you know of any other web sites that can help me through
the process of 'elimination'!
