For those who asked about the sugar in the zucchini bread recipe, the
amount is 1-1/2 cups.  Sorry I didn't respond sooner--we've been on
vacation.  Here is the complete recipe:

> 1/2 cup vegetable oil
> 1/2 cup applesauce
  1-1/2 cups sugar
> 2 cups grated, drained zucchini
> 2 tsp. GF vanilla
> 1 cup soy flour
> 1/2 cup white rice flour
> 1/2 cup potato starch
> 1 tsp xanthan gum
> 1/4 tsp. baking powder
> 2 tsp. baking soda
> 1 tsp. salt
> 1 tbsp. cinnamon
> 1 cup raisins (optional)
> 1 cup chopped walnuts (optional)
