I too was raised on a self-supporting farm.  Slaughter was kept hidden
from me until one day I ran out of the house and saw my *pet* cow being
shot in the head,  then later hung from a tow truck and slaughtered.  I
also viewed sheep being slaughtered, chickens, hogs, etc etc. I had the
same reaction as your girlfriend for years.  I got over it.  Now eat all
kinds of meat and enjoy it.  Perhaps she too will get over it.
