Yo- Ray specified even in the previous edn of NT
that uncured bacon -- that is, not pickled in
sugar and nitrates/nitrites -- is preferred, both
for eating and as a source of cooking fat.
Hempler's and Sara-Joe's bacon, to name two
regional brands found in NW USA, both offer
uncured and even organic bacon. Sure it costs
more, but then nobody ever said eating Paleo
was cheap. Contrary to the Spanish proverb
about how Health Is Not For Sale, one can
get close to it by avoiding the Forbiddens.
Better health cost less money to balance
things out.
Of course the pharmo-medical industry thinks
that one *can* buy health ... from them.
What a laugh! But I digress.
So, if one must eat cured bacon "on the
trail" or under hospitality rules, then just
reconcile oneself to the impurities. Oh, and
eat some "vitamin C"-rich fruit to neutralize
the carcinogenic nitrosamines generated by
cooking nitrated meats.
