That is my understanding of stick margarines too. I use oil for baking most
things; I have found, however, that oil is not good for pie crusts, sugar
cookies...essentially, anything that needs to be rolled. In Canada, there
is a margarine called Celeb (found in only a specific chain of stores) which
makes a "lactose free" version which is dairy free and can be used for
baking. We use this one all the time.
