You can purchase powdered soy milk -- I've found it at Wal-Mart
Supercenters, Kroger's, and our local health food stores -- This should
substitute fairly well in your candy recipe...

As for the cottage cheese -- if you are able to tolerate yogurt (not sure
whether you have an allergy or a lactose intolerance or how severe etc) then
you can put the yogurt in a strainer lined with muslin or cheesecloth and
drain it for a couple hours...it works fairly well for a substitute for
cottage cheese or cream cheese then in recipes...
