APPLESAUCE SWEET POTATOES by Debbi DeSisto
1 pound (about 1 medium) sweet potato, cooked
1/2 teaspoon salt
8 ounces applesauce
1/3 cup brown sugar
1/2 teaspoon cinnamon
3 tablespoons chopped pecans
2 tablespoons butter
Preheat oven to 375 degrees. In a shallow baking dish, place sweet
potatoes and sprinkle with salt. Spoon applesauce over top of sweet
potatoes. Combine sugar, cinnamon with pecans; coating pecans well. Sprinkle
over the top of sweet potatoes. Dot with butter. Bake for 45 minutes.
SWEET POTATO SOUFFLÉ by Debbi DeSisto (modified by Jay)
4 medium sweet potatoes, cooked
1 teaspoon vanilla
1 cup sugar
1 egg, beaten or substitute
1/4 cup milk or substitute
3 tablespoons flour or starchy alternative flour
1/2 cup butter
1 teaspoon cinnamon
Preheat oven to 350 degrees. Mash sweet potatoes with remaining
ingredients, mixing thoroughly. Put in a greased baking dish. Bake for 40
minutes. Top with 1/3 cup brown sugar or 1 cup mini marshmallows and bake an
additional 5 minutes.
