Mashed potatoes are great for sneaking in veggies and things too!  I make
"veggie burgers.."  Take whatever veggies you have around and process them
together (onions too!).  Saute them in olive oil with your choice of spices
(I use garlic, s/p, oregano...).  Mix with potatoes and then make patties.
I cover mine with breadcrumbs and then freeze them.  When ready, thaw and
heat a bit in the microwave.  Then crisp on pan with olive oil.  If your
child can eat eggs, I would mix them in too!  (Mine can't unfortunately)

My boys will eat them on hamburger buns (non-dairy!) with catsup - they are
very good.

        One of our "quick fix" meals is refried beans and tortillas.  My 2
1/2
        year old loves the beans from Taco Bell, so I do my own too.  We
always
        have extra sauce packets from the drive through.  I buy the small
cans
        with a pop top lid.  I give her about half a can.  Put some mild
sauce on
        it and microwave it for 20-30 sec.  I cut the tortilla into little
        triangles.

        Another great make ahead / keep in the freezer must for us is mini
hot
        dogs in a blanket.  I use the cocktail size Addells chicken and
apple
        ones which are the only ones I've found that don't have corn.
Hebrew
        National also makes a cocktail size, but I can't find them 'round
here.
        I use the Pilsbury Reduced Fat Cresent Rolls and cut each into
quarters.
        Wrap the little dogs and bake them about 10 minutes.  Put them on a
rack
        and cool.  Put them on a tray and freeze.  Then just put them in a
zipper
        bag or other airtight container.  I take a few out and heat them up
in
        the wave.

        I also have made chicken nuggets and frozen them, but that's a lot
more
        work up front.  When I make spaghetti sauce, I freeze 2 oz
containers
        then I just have to cook pasta.
