In using my bread machine, I have found that the main contribution of the
milk in bread recipes is the protein. (The fat is already there as
butter/margarine, the fluid is there as water). When I made this connection
and found out that gluten is wheat protein, I added extra gluten to the
recipe in place of the powdered milk, and got excellent results.
