"Saucisson" is raw, seasoned sausage. French people like to eat it
with bread, but most raw fooders avoid it, as it is very salty and
often preserved with nitrites.

Re: raw meat recipes. You can find a few in the book "Nourishing
Traditions", by Enig and Fallon, and in "L'alimentation crue en 400
recettes", by Ozanne and Pauthe (if you can read French). I haven't
tried these recipes yet but I will.
