Having grown up in Upstate New York,
Maple syrup is made by drilling a hole in a sugar maple tree,
collicting the sap in large barrels, (we used new clean garbage cans)
and gently boiling the sap to remove the water.  After about a 32X
reduction, you have Maple Syrup.

The native indians used to do this every spring.
