I have had a quite urgent call from a newly-diagnosed celiac who has been a diagnosed diabetic for some time. In addition to gluten, she is "allergic" to soy, nuts, navy and kidney beans, all dairy, garlic, and eggs!! I am at a loss, as I have no information on living gluten-free as a diabetic. If you can give me guidance, I would love to hear from you. I am coming up with zilch on the internet, too. This poor lady is starving on an all-rice existence, as she had surgery on her right elbow last week (you guessed it: she is right-handed!!).
