Tom:
After a bit of thought I suspect you are right. It is saponin that increases
after sprouting, and peaks around day 6-7 - the most common time for
eating them. My major paper on sprouting in the articles section of
living-foods.com, provides a citation on saponin. (Sorry that I can't
do the cite from memory - I found it a long time ago and it would require
some effort to find in my files).
