I've developed this basic corn muffin recipe which ig very well
received.

2 cups corn meal (I used Indian Head White Corn Meal)
4 teaspoons baking powder
1 teaspoon salt
1 teas cinnamon
1 egg, beaten
1 cup buttermilk
1/2 teaspoon baking soda
2 tablspoons oil
1/2 cup sugar or honey
1/2 cup raisins or cranberries or blueberries
1/2 nuts (optional)

Preheat oven to 450.  Put paper cups in muffin tins,  Combine all
ingredients, but do not overmix.  Pour into prepared tins.  Bake about
17 min or until test done.
