One of the mainstays of my attempt to go paleo (not there yet) has been
vension sausage.  I get mine from a butcher in a small Texas town that
caters to deer hunters.  He mixes the whitetail meat half and half with
pork and adds *secret* seasonings.  I know the seasonings don't include
sugar, since even the sauce on a few buffalo wings can send me into a
sweaty hypoglycemic reaction.

        It isn't legal to sell whitetail in Texas, but he can charge me for
the
pork and "processing."  And there are other venison meats perfectly
legal to sell.  If you can find venison of any kind in your area, I
highly recommend this as a welcome change from t-bones and other
supermarket staples.  Pure venison would probably be too dry for
sausage, but mixed with pork it works great!
