<<Disclaimer: Verify this information before applying it to your situation.>> Brief history: In the course of changing to a lowered-carb diet 7 months ago, which greatly reduced the amount of grain-based products I was eating, I noticed a huge reduction in some prior symptoms which can be associated with CD (mainly gas, cramping, and fatigue). As I also have some associated conditions (tendency to anemia, hypothyroidism), I have decided to get tested for CD, and have been adding gluten back in to my diet for this purpose. The challenge (heh) is how to do it without greatly increasing my carbohydrate intake. So far, I have found 2 things: Pure gluten "dumplings" added to soup, and adding gluten to lowered-carb versions of muffins. (I must say it is quite bizarre to hunt to find ways of adding gluten to my diet, which may lead to my excluding it altogether!) I've been doing this for several weeks and am looking for some other ideas - boredom is setting in! If anyone could send me ideas I would be very grateful, and will post a summary. Laura Dolson
