My predicition is that progress will be made initially with health food stores having a small restaurant attached and they will be the first to start gf restaurants. Many celiac groups are working with restaurants so they get a better understanding of gf foods. Most celiac groups have a gf meal in a restauarant once a year to start educating restaurants. One group gave the owner Bette Hagman's cookbook and asked the chef to cook using that book. One of our members brought gf pasta to the restaurant and got the owner to cook her gf pasta for her to make her meal gf. We encourage our members to talk to restaurant owners before going to the restaurant to try to get them to recommend what on the menu is gf. Good for your daughter that she is thinking positively. We are all hoping her dreams will come true, but many are starting with small steps to try to make our needs known. Family owned restaurants seem to be the most cooperative - especially if they have allergies in the family. Good luck. Jane Trevett - New haven, CT >>
