And that nearly all the commonly extracted vegetable oils are inferior. Butter probably depends greatly on the source, but raw butter and cream from pastured cattle and/or goats is probably in my top three... My ranking is more based on my experience with them all in my diet than any specific research. Books including info on fats I would recommend include Native Nutrition (Schmid), and Nourishing Traditions (Fallon, & Enig). Celestial Arts has a book on fats which Aajonus recommends but I don't have Aajonis' book available now to check the title. Cheers, Kirt
