Dean, Loren Cordain points out that the n3:n6 ratio of _grain-fed_ cattle is way out of wack when compared with that of _game_ animals. Altho he's unsure of this, _free-range_ cattle probably have an n3:n6 ratio which is closer to wild game. In addition, the total fat-to-lean composition and the relative levels of the various types of fat in grain-fed, penned-up animals varies greatly from game animals, and, therefore, probably free-range cattle, also. He believes that the optimal fuel for humans is game animals, and that the farther we stray from that standard the greater our chance of auto-immune disease. My (Loren's?) $0.02 worth. Joe Friel
