As far as I know it is unknown >in Holland. Xanthum Gum is a powder milled from the dried cell coat of a microorganism called Xanthomonas campestris grown under laboratory conditions. It works as an excellent substitute for the gluten in yeast breads made from flours other than wheat. Several place in the US sell this by mail order, e.g. Ener-G Foods and The Gluten Free Pantry. I suspect you can get one of the to ship overseas. Both have web pages and e-mail accounts. See: http://www.ener-g.com/ http://www.glutenfree.com Don Wiss.
